Marinated ripe tomatoes in basil olive oil, coarse salt and freshly cracked black pepper - the intense flavour of the tomatoes is extracted and forms a natural dressing for the salad.

Ingredients

1kg Mixed Heirloom Tomatoes, Halved
1⁄2 Red Onion, Thinly Sliced
25ml Basil Olive Oil
1 tbsp Red Wine Vinegar
To taste Sea Salt
To taste Black Pepper
100g Bocconcini
500g Rocket

Instructions

  1. Into a mixing bowl combine the sliced tomatoes, raw red onion, basil olive oil, red wine vinegar, sea salt and black pepper.
  2. Set the bowl aside and allow to marinade for at least 20 minutes, mixing occasionally.
  3. Into a serving bowl lay a bed of rocket leaves then top with the basil marinated tomatoes.
  4. Scatter the bocconcini over the tomatoes and use the marinating juices as a dressing, serve as a bright refreshing summer salad.
