Chimichurri

A piquant sauce and marinade of South American origin. Chimichurri combines fragrant herbs with punchy vinegar and garlic olive oil, best served to boost the flavour of grilled meats and fish.

Ingredients

75ml Garlic Olive Oil
20ml Red Wine Vinegar
1 Tbsp Lime Juice
100g Parsley, Roughly Chopped
100g Coriander, Roughly Chopped
50g Oregano, Picked
1 Red Chilli, Finely Chopped
To taste Salt
To taste Black Pepper

Instructions

  1. Into a pestle and mortar add the parsley, coriander, oregano, red chilli and salt.
  2. Grind the herbs until fine then gradually pour in the garlic olive oil.
  3. Combine the ingredients well then transfer to a bowl.
  4. Into the bowl add red wine vinegar, lime juice and black pepper.
  5. Taste and adjust the seasoning, the flavour should be sharp and a little spicy.
  6. Allow the chimichurri to sit for 20 minutes before serving, store in the refrigerator and use within 48 hours for the freshest results.
