South American ceviche highlights quality seafood with citrus and herbs. Raw fish is marinated in citrus juices, spices, herbs and oil, the resulting slivers of fish bursting with a citrus zing.

Ingredients

400g Sea Bass or Sea Bream Fillets, Skin-Removed and Pinboned
100ml Lemon Juice
100ml Orange Juice
2 Red Chilli, Finely Chopped (Adjust to your preference)
½ Red Onion, Finely Chopped
10g Mint, Finely Chopped
30g Coriander, Finely Chopped
25ml Lemon Olive Oil
To taste Salt

Instructions

  1. Dice the fish fillets into 2cm cubed pieces then add to a mixing bowl.
  2. Pour one teaspoon of salt, the lemon juice, orange juice, red chilli and red onion into the mixing bowl.
  3. Allow the fish to marinade for 8 minutes.
  4. Scatter the mint and coriander through the mixing bowl and stir to combine.
  5. Serve the ceviche immediately, each topped with a drizzle of lemon olive oil. The fish will continue to cook in the citrus juices so should only be prepared once ready to eat.
